About This Beer
This ale began as a traditional Saison—crisp, dry, and delicately spiced—before embarking on a slow, transformative journey. Aged for two years in Bowman bourbon barrels, the beer drew deep character from charred oak, warm vanilla, and soft bourbon heat. After its time in wood, it was bottle-conditioned for a full year with Brettanomyces, allowing the wild yeast to gently evolve the profile. The result is a beautifully complex ale where earthy funk, barnyard nuance, and ripe stone fruit interplay with the richness of bourbon-soaked wood.
